Abstract: The use of soy protein products in school meals is the focus of this article. Texturized vegetable protein, soy concentrate or textured soy concentrate (TSC), and isolated soy protein (ISP) are each described. The nutritive value of a burger made partially or entirely from soy protein is compared with an all beef burger.
